Banana pancake

Some mornings are just better when you have pancakes. Especially if they are as simple and quick as this one.

INGREDIENTS

Makes 1 pancake

1 banana

1 egg

5 spoons of flour (I use spelt flour but you can also use wheat or all purpose)

1 teaspoon of baking powder

3 tablespoons of milk

1 dash of cardamom (optional)

blueberries (also optional)

and yes: no additional sugar or fat added!

PREPARATION

  1. Smash the banana and mix it with all other ingredients – if you add blueberries add them in the end.
  2. In a non-stick pan, heat some butter. Once little bubble appear, set heat at middle of your heat scale and add the dough. Bake it this slowly (maybe with a lid on top) and flip it once the edges look baked through
