Simple tomato soup


With April weather in May, this warm and colorful soup can cheer things up at least a little bit.


Serves 2

2 cans of peeled or diced tomatoes (make sure it’s plain tomato with no sugar or spices added)

2 teaspoons of vegetable broth powder

1 teaspoon of thyme

1 teaspoon of orgeano

1 dash of sugar

1 onion


  1. Dice the onion and fry it in some olive oil
  2. Before the onion turns brown, add the tomatoes
  3. Blend everything and add the spices
  4. Let boil until everything’s hot
  5. For serving, you can add a spoonful of goat cream cheese or cottage cheese and fresh herbs
